Dr Val's Holiday (Vegan and Keto) Macadamia Nut Fudge • 300 grams of Cocoa butter • 200 grams of coconut oil • 200 grams of Nutiva's buttery coconut oil (this adds a wonderful buttery taste) • 300 grams of macadamia nuts • 8 full droppers of stevia (can use Luo Han as a substitute) • 1 teaspoon organic vanilla extract Mix the cocoa butter and coconut oils in a sauce pan on low heat for three to five minutes. Stir occasionally. Blend nuts in a blender or food processor until finely ground. Pour cooled butter and oil mix into blender and add stevia and vanilla extract. Blend until smooth creamy texture. Line a cake pan with parchment paper and pour in mixture. Refrigerate until the fudge reaches the desired consistency. Cut into pieces and serve. Early Signs of Learning Disabilities The first years in school are a special time. Parents watch anxiously from the sidelines as kids venture off, making new friends. As magical as these years are, parents should watch for signs that everything is going well academically. The key to treating learning disabilities is catching them early. The problem is that the signs are easy to miss. Children may start talking late. When they do start talking, they may have trouble pronouncing some words. They may have trouble hearing the separate sounds in a word, making it hard for them to locate rhyming words or beginning sounds. While these problems are subtle, they cause real trouble learning to read. Sleep Struggles Sleep is critical to a child’s cognitive, emotional and social development. Young children need at least 11 hours of sleep every night. Yet, sleep problems are among the most frequently reported struggles for parents. Issues like anxiety, busy schedules, school changes or other transitions can make bedtime challenging for everyone. A few tips can aid the transition and help everyone get a good night’s sleep: • Make efforts to connect with your child during the day so that they don’t need to do this when they should be sleeping. • There is nothing wrong with using a night-light if your child is nervous about the dark. • Start to ‘wind-down’ the activity level of your household about an hour before bed-time. This is not the time for wrestling or physical games! • Try making yoga or mindfulness exercises a part of your bet-time routine. Yoga is a great way to teach kids how to relax and calm down. (A great book to introduce kids to yoga is: Sitting Still Like a Frog by Elaine Snel).
