Dr Val’s Healthy Chocolate
8 oz organic bakers chocolate unsweetened
¼ cup coconut oil or cocoa butter
1 Tbsp protein powder (optional)
1/8 tsp cinnamon and cardamom
natural salt to taste
xylitol to taste
Combine above ingredients in a sauce pan. Heat on medium low, stir whole time. Once melted remove from heat, add protein powder if desired, poor into pie tin and place in freezer. Serve as desired once cooled.
For extra flavours sprinkle almonds, dried cranberries or unsweetened raw shredded coconut over top before freezing.

Dr. Val’s Healthy Brain Granola
5 cups Quinoa flakes
3 cups toasted Buckwheat/Kasha
1 cup unsweetened, shredded coconut (optional)
1/4 cup chia seeds or black sesame seeds
2/3 cup pumpkin seeds
2/3 cup sunflower seeds
1/4 cup coconut flour
1 cup water
1/2 cup brown rice syrup or xylitol (or less depending on desired sweetness)
1 tsp vanilla bean powder
1/2 inch fresh ginger - peeled
1/4 cup coconut oil/coconut butter
1/2 tsp cinnamon
1/2 tsp cardamom
1. Mix grains, coconut, seeds and coconut flour in a large bowl.
2. Blend water, brown rice syrup / xylitol, spices, coconut oil or coconut butter in blender until smooth. Pour over dry ingredients and mix well
3. Divide onto 2 large cookie sheets. Bake for 1 1/2 hours at 250F stirring every 30 mins until dry.
4. Remove from oven, let cool and put into air tight container.
